A RECIPE FOR STALE BREAD
Students put a “stop” to millions of loaves of bread going into garbage every day. Students of Izmir University of Economics (IUE) Department of Culinary Arts and Management, supported the “Ekmeğimize Sahip Çıkalım (Let’s Protect Our Bread)” project of students of Torbalı Girls’ Technical and Vocational High School, and baked 30 servings of pastry out of 5 stale breads.
Students, who baked under the guidance of Osman Sezener, Trainer Chef at Department of Culinary Arts and Management, said that 5.9% of the bread baked in Turkey, which was equivalent to 6 million loaves of bread were wasted. “Based on the study conducted by Soil Products Office of Turkey (TMO), this waste costs 1 billion 546 million TL in one year, whereas this money could be used to build many social buildings such as schools, hospitals. We are in collaboration with the students Torbalı Girls’ Technical and Vocational High School in their “Ekmeğine Sahip Çık” Project. We both support them and raise awareness about the issue of wasting bread,” stated the students.
‘Do not throw away bread’
Sarp Oktay, a senior at (IUE) Department of Culinary Arts and Management, mentioned that they were involved in a joint project with high school students, and he said that instead of throwing the bread away, they used stale bread in various recipes.
‘Stale bread, new tastes’
Büşra Karaman, junior at Torbalı Girls’ Technical and Vocational High School, indicated that they wanted to make a nice presentation by baking pastries out of stale bread, and Gülşah Bellik, another junior, said that instead of throwing away millions of loaves of bread, they could be used as new tastes at our tables.
